Introduction to SuSu
FULTON MARKET — A multi-cultural steakhouse is getting ready to debut on Restaurant Row in Fulton Market.
SuSu, opening “soon” at 652 W. Randolph St., will blend flavors from Southeast Asia, the Middle East and the Mediterranean, according to a press release.
The restaurant will offer premium steak, sake and a 12-course tasting menu in what was formerly the three-Michelin-star restaurant Grace, which closed in 2017.
The Concept and Team
The 6,000 square-foot-space has been revamped by owner Paul Alqas and managing partner Chase Meyer, both behind Lincoln Park restaurant Medi. They’re joined by executive chef and partner Alexander Willis, whose resume includes stints at Dusek’s, Moody Tongue and Hog & Hominy in Tennessee.

Menu and Influences
SuSu’s menu draws from Willis’ nomadic upbringing and the cuisines that shaped his career, including Lebanese and Assyrian cooking, as well as his time living and working in Thailand, Vietnam and Japan, according to a press release.
Those influences show up throughout the menu, from the raw bar to steaks finished with sauces like zhoug, black tahini and ssamjang.

Dishes and Offerings
Dishes include Wagyu fat confit fingerling potatoes finished with preserved lemon and shankleesh, a tangy Middle Eastern cheese, alongside roasted carrots glazed with blood orange, miso and fenugreek.
Shareable starters are vegetable-forward, like a tabbouleh Caesar and chicory fattoush, and seafood dishes meant for the table include coal-roasted crab and lobster dumplings.
Proteins center on Wagyu and other premium cuts, including Wagyu shawarma paired with black apple molasses and shiso leaf, as well as prime Wagyu and beef served with sauces ranging from herb-packed zhoug to teriyaki-inspired finishes.
Non-beef options range from lamb to chicken stuffed with Swiss chard and mint and seasoned with double-brewed soy sauce.

Communal Dining and Tasting Menu
Communal dining is central to SuSu, with family-style meals led by the kitchen as well as an intimate tasting menu called “Kan Zaman.”
The 12-course menu is served in a private, 12-seat dining room behind a hand-carved wooden door, according to the release. The steak, seafood and vegetable courses are paired with sake and wine.
