New Menus Set for Epcot International Flower & Garden Festival
A Year-Round Process
Development of eats and drinks for Epcot’s four major festivals is a year-round process with some ideas in whiteboard limbo until the right moment and festival align, Disney chefs and staff members say.
New Kiosks and Menus
Among the new kitchen/kiosks this year are the Yacht Grub and Beach Grub, located in the rose garden area that connects World Showcase and Imagination Pavilion area.
Beach Grub
The Beach Grub menu includes grilled street corn on the cob, seafood bake (shrimp, mussels, clams, more) and s’mores bars. The neighboring Yacht Grub lineup includes dips and chips, artisanal cheeses and meat assorti (beef bresaola, prosciutto ham, salami).
Farmers Feast
The Farmers Feast kiosk, relocated to the new CommuniCore Hall, will feature three distinct menus during the run of the fest.
“Our idea is it changes seasonally,” said Daniel Sicilia, executive chef. “So basically, every month the menu flips, having that idea of an appetizer, entree, dessert.”
Others
The grill will be fired up in multiple Epcot locations, including Magnolia Terrace, the kiosk at American Adventure pavilions.
“We’re grilling fresh oysters, topping them with Andouille butter, which I think is going to be a huge item,” Sicilia said.
“I like the campfire s’mores bar” at Beach Grub, said Amanda Lauder, chef de cuisine – pastry. “It’s flavors you can know and love for s’mores, but we did something a little fun and we actually took all of our graham-cracker crumbs, added a little extra salt, and we had them smoked over at the Regal Eagle smokehouse.”
Other New Festival Items
Other new festival items include conch fritters at Florida Fresh, Jamaican jerk chicken at La Isla Fresca (between France and Morocco pavilions), lemon-lavender Baumkuchen from Connections Eatery and a lemon tart with lemon curd, blood orange fluid gel, aquafaba meringues and raspberry power from the kitchen inside the Odyssey building.
“I think one of my favorite things we’ve seen for this festival is the lemon tart, which will be at the Citrus Blossom,” said Chelsea Florig, food and beverage project manager. “It is spring on a plate.”
