Kharat’s journey to J-Bar-M BBQ was unexpected. After leaving Blood Bros. BBQ, he found himself bartending at Holler Brewing Co. It was there that he met Houston Chronicle barbecue columnist J.C. Reid, who suggested he meet with J-Bar-M’s owner and management team. Having previously worked at notable establishments like Beaver’s and Buffalo Bayou Brewing, Kharat felt ready to dive back into the world of barbecue.

"The space is beautiful," Kharat remarks about J-Bar-M. "The firepower they have in the pit room is awesome. There are only a couple of spots in Houston that have this much equipment." The restaurant boasts four 1,000-gallon smokers, two roasters capable of handling whole hog or chicken, and a live fire grill for items like burgers and steaks. This extensive setup presents Kharat with endless possibilities for creativity and innovation.

"My main focus at the moment is getting all the barbecue to 100 percent. It was good, but now it will get even better," Kharat states.
