ShĹŤgun Taqueria combines Mexican and Japanese cuisine, creating dishes that challenge the ideas behind both food traditions without losing their essence.
“It’s not about doing crazy dishes and deconstructing this or that,” said Francisco Islas, chef and owner of Shōgun Taqueria. “This is more about taking simplistic ideas from both cultures, their traditional techniques, and putting them together to create something unique.”

Among the dishes offered at the restaurant are menudo ramen, with tripe, tongue, cilantro, and onion; chicken pozole shio, with chicken, hominy, cabbage, radish, and guajillo; kimchi quesadilla, with your choice of protein and Oaxaca cheese; and Chef Islas’ favorite, tonkatsu con mole, a deep-fried breaded pork cutlet with rice and mole.

Beverage Offerings
The beverage offerings will also span both Mexican and Japanese tradition. The sakura margarita will have tequila, lime juice, agave, and sakura, a cherry blossom-infused liqueur; the matcha paloma will have tequila, matcha, and grapefruit soda; and the hibiscus sake sangria will have sake, hibiscus tea, red wine, passion fruit and citrus slices.
Concept and Inspiration
The idea to bring the two styles of cuisine together came about in 2021, when Islas and Kevin Martinez, chef of Tokyo Cafe, worked together at the Fort Worth Food & Wine Festival and prepared some fusion dishes.
“I realized that another world was possible, and I could create something that would take Mexican food further,” Islas said.
Restaurant Background
The restaurant is Francisco Islas’ third venture. In 2016, he opened Paco’s Mexican Cuisine on Magnolia Avenue in Fort Worth with his father. In 2022, he expanded to another location in Fort Worth, Sundance Square.
The first Paco’s location closed a couple of months ago, and Shōgun Taqueria will open this March 28 at the same location.
Interior Design
The interior promises to be a cultural fusion as well, with the yin-yang vibes of black and white combined with colorful Talavera tiles brought in from Mexico.
