History of Jasper’s Restaurant
The Richardson restaurant was the final Jasper’s open in North Texas. It was the fourth one in Texas when it opened at CityLine 2016.
The restaurant was created in partnership with chef Kent Rathbun in the early 2000s. When the first Jasper’s opened in Plano’s Shops at Legacy, it was described as “gourmet backyard cuisine.” It was a casual sister to Abacus, the fine-dining restaurant on Dallas’ McKinney Avenue.
Plenty has changed since then: Rathbun split from the Jasper’s and Abacus restaurant group in 2016. And Abacus closed in 2019 and became a Jasper’s — which then shuttered during the COVID-19 pandemic. (The Abacus-Jasper’s space in Dallas has since been redesigned and is a buzzy Latin restaurant called Mar y Sol owned by Dallas restaurateur Alberto Lombardi.)
