Chef Misti Norris’ Next Moves: Pop-Ups and Collaborations
Since the closure of Petra and the Beast at the end of December, many Dallasites have been wondering what’s next for James Beard-recognized chef Misti Norris. Norris made it clear in her statement on the closing that her eyes are firmly fixed on opening Petra again in another location, but in the meantime, she is not embracing an out-of-sight, out-of-mind ethos.
Pop-Up at Saint Valentine
Norris will partner with two different local spots for limited menus of her food the week of February 26. The first is a week at Saint Valentine, where Norris is bringing back her pop-up Rainbow Cat from Wednesday, February 26, until Saturday, March 2. Norris’s menu replaces the usual snacky offerings at the bar, and a press release teases some of the dishes. Expect to eat the porchetta McMuffin (house-made English muffins, fennel cured porchetta, braised greens, fried egg, American cheese, and hot sauce), the Unicorn Dog (garlic sticky rice “bun,” smoked pepper sausage, mushroom mayu, and hot mustard), and Blackout Noodles (burnt onion wheat noodles, black curry, crispy black fungus, mayu, and a pickled egg).
Five-Course Dinner at Far-Out
Norris will also offer a five-course dinner with wine pairings on February 26 at Far-Out in collaboration with Benjamin Calais of Calais Winery in Hye, Texas. Far-Out is the new name of the spot formerly known as Wriggly Tin, which quietly opened to the public under new ownership. Tickets for that were already sold out at press time and with zero details about the food. Now, that’s supply and demand at work.
What’s Next?
While we wait for Petra to rise again, we can look forward to enjoying Chef Norris’s creations at these two local spots. With her commitment to innovative, delicious, and visually stunning food, we can expect a treat for the senses. Whether it’s the playful, Instagram-worthy dishes at Saint Valentine or the sophisticated, expertly paired wine dinner at Far-Out, Chef Norris is sure to delight diners with her culinary expertise.
