LOGAN SQUARE — Cannabis and pizza are coming together under one tent for a special, one-day collaboration. The Paulie Gee’s Logan Square staff has been hard at work finalizing a huge pepperoni pizza for Friday’s Pi Day. It will feature cannabis-infused Mike’s Hot Honey and a balsamic glaze made by Ivy Hall.
The Pizza Details
The 64-by-32-inch “Grandma Sicilian pizza,” a thin-crust rectangular pizza made in a sheet pan, yields 50 slices that will only be available to be eaten onsite at the Logan Square dispensary’s new consumption lounge, according to the company. Shoppers 21 and older at any Ivy Hall location will be able to enjoy their favorite cannabis products or indulge in an infused pizza slice starting noon Friday in a designated pop-up lounge at the dispensary, 3115 W. Armitage Ave., with a valid receipt.
Infused Pizza Options
Customers will be able to dose their pizzas with 2.5 milligrams of Mike’s Hot Honey and a balsamic glaze to pick from, said a representative for Ivy Hall. There will also be non-infused options that include cheese, pepperoni, Sicilian veggie or vegan slices.
The Creation of the World’s Largest Infused Pizza
The collaborators are billing the pizza as the “world’s largest infused pizza,” a challenge that Derrick Tung, owner of Paulie Gee’s, was happy to take on. “Once we do it, I have it no doubt others will follow,” Tung said in between working on dough test batches Tuesday. “I am excited to get the community together with the pizza.” Tung said the idea came from Ivy Hall’s Jonny Boucher, the director of marketing, who was inspired after a Massachusetts-based cannabis company launched what it claimed was the world’s largest weed-infused brownie for National Brownie Day in 2021.
Building Community Through Shared Experiences
“Cannabis and pizza are a perfect pairing to bring people together and build community through shared experiences,” Boucher said in a news release. “I’m thrilled to have worked with my incredible friends and the talented crew at Paulie Gee’s to bring this experience to fruition and create the world’s largest infused pizza.” Special equipment was needed because of the pizza’s size, Tung said. Reno Metalware crafted the custom 64-by-32-inch pizza pan to make the pizza, and pepperoni from Ezzo was used.
Future Plans
Now that Tung has the custom-made pan and the dough perfected, he hopes to bring the pizza — without the infusions — in some capacity to the restaurant in the future. He said the pizza would only be available in store as its too large to fit into a box or delivery car. Tung often partners with local businesses to make special pizza creations for holidays, neighborhood events, fundraisers and more.
