Introduction to Chez Adele
NORTH PARK — Bart Kabore said he wants customers who dine at Chez Adele to “feel like they’re taking a flight.” With a menu that features everything from West African marinated tilapia to classic smash burgers, the North Park restaurant focuses on serving quality international cuisine in a welcoming setting. “Chez Adele is a place where you can travel the world all while feeling at home,” said Kabore, the restaurant’s owner and head chef.
The Concept Behind Chez Adele
While the restaurant has been open at 3311 W. Bryn Mawr Ave. since December, it held a grand opening just last week. Kabore said he wanted to get a feel for the business before he started promoting it. Chez Adele, which was named in honor of Kabore’s mother and means “At Adele’s” in French, was inspired by Kabore’s international childhood.

Inspiration from International Childhood
Kabore was born in Burkina Faso but moved nearly every two years because his father worked for the World Health Organization. Kabore said he was exposed to a wide variety of foods and cultures at a young age. As the youngest of four, Kabore also spent a lot of time with his mother in the kitchen. When Kabore moved to the United States to study at St. Cloud State in Minnesota, he would often cook his mother’s recipes. He kept that practice up while completing his master’s degree at DePaul.
The Journey to Opening Chez Adele
Kabore spent years working in information technology, but he continued to cook for fun and dreamed of opening his own restaurant one day. In 2023, Kabore decided to give it a go and opened North Burgers and Hot Dogs in the Austin neighborhood. While the North Burgers and Hot Dogs location didn’t work out, Kabore discovered he had a passion for running a restaurant and started looking for new opportunities. Kabore, who has lived in North Park since 2019, participated in the Bryn Mawr Block Party as a food vendor last summer. He saw how vibrant the business corridor was and thought it would be the perfect spot for his next endeavor.
Vision for North Park
Kabore said he wants to draw more people to North Park. He believes the stretch of Bryn Mawr near Chez Adele could be the next Andersonville. “Sometimes you just need to plant the seed and hope it grows,” he said.
